International Culinary Voyage!
Take your pallet on an amazing ride with flavors from all around the globe! You will be cooking, dining, relaxing, and having an awesome multinational experience without having to leave the state. The Continuing Education department has teamed up with one of the area’s culinary geniuses to put together a 4-month tour of some of the most fascinating foods from around the world. Once a month we will be exploring a different region and the tastes that come along with it. It’s the perfect way of cooking great food while discovering the regional culture and cuisine.
Each four hour class will include the following:
-Discussion of the region and the history behind the cuisine in that area
-Chef’s demo on how the food is prepared
-Hands on preparation, production, and of course, yummy consumption of the 3-course meals
-Critique of meals, question and answer period, wrap-up: suggestions & clean-up

February Class: February 16, 2013 – “Date Night in Paris”
You and your date are welcome to come fill your pallet with rich and filling dishes using cream-based sauces of the classical French cuisine. Food is elegant and elaborate with a strong emphasis on presentation. Only the finest ingredients are used for each meal. Postpone your Valentine date, until this Saturday of Culture, Cuisine, and Connection!
March Class: March 9, 2013 “It’s Greek to Me”
The food consists primarily of fruits and vegetables with an emphasis on poultry and seafood, grains, beans and pastas. Come tickle your tongue with tastes of eggplant, artichokes, squash, tomatoes, legumes, onions, mushrooms, okra, cucumbers, and a variety of greens are that are served fresh, baked, roasted, sautéed, grilled and puréed.
June Class: June 1, 2013 – “An evening in Italy”
Join us on a truly wonderful culinary experience in the kitchen where you will cook first-hand your authentic Italian meal. Savor the taste of, pastas, and exquisite desserts from the culture and lifestyle of Italy. Let’s investigate this cavern of magic herbs, rosemary and thyme and sage, oregano and the wines that go along with it!
June Class: June 15, 2013 “Es delicioso”
This richness is no surprise considering Latin cuisine pulls from a colorful cultural history and relies on a spectrum of ingredients ranging from potatoes, corn and other native crops to imported African meat stews, sausages, sauces, and seasonings. These spices are generally what give the Latin American cuisines a distinct flavor. Let your mouth enjoy the tomatoes, roasted bell peppers, garlic, onions and herbs of this region right in time for Cinco de’ Mayo!
Paranormal Investigation 101
This course will equip you with the facts you need to participate in conducting a proper paranormal investigation. You will learn the key elements essential for the success of an overall investigation. You will also learn how to conduct an actual investigation on the campus itself with fellow students as well as instructors. This seminar will show you a comprensive approach by using scientific equipment used by paranormal investigators and will identify solutions facing clients impacted by the paranormal environment.
Your instructors will provide information that is current, comprehensive and noncommercial. The seminar has been carefully designed to provide the information you need, without overloading you with unnecessary paranormal jargon.

Golf
Class will serve as a basic introduction to those seeking to learn more about the game of golf. Class is designed for the students to learn a brief summary of golf basics including but not limited to: Rules, Terminology, Full Swing and Short Game. Students are required to have at least one golf club for all instruction sessions.

Floral Design Class-
This class will give detailed information about basic silk and fresh flower arranging for everyday use and the proper care and handling of flowers and plants. No lab fee is required. Students are responsible for bringing their own supplies. Supplies required for every class meeting: cutting tools, scissors, glue gun, glue sticks, floral tape, floral wire and wooden pegs. Other supplies will be needed throughout the course (silk flowers, fresh flowers, vases, wreaths, oasis, and ect.)
The goal of this course is to gain a better understanding of basic floral designs.

Mike Papa is a Thibodaux native and has been playing chess 47 years. He earned the title of National Master from the United States Chess Federation in 1985 and has written two books on chess. He has competed against world champions, US champions, and world famous Grandmasters and International Masters all around the country from Los Angeles to Philadelphia. He teaches at several local elementary schools and gives private lessons to people of all ages. In these camps he will teach all beginners how to play and help others improve their games by instruction and holding tournaments. Each participant will be given an official chess tournament set, vinyl roll up board. and zippered pouch or chess books worth $30. Awards will be given for the tournament on the last day of camp.

“Painting with Light” – Basics in Photography
Would you like to learn how to “capture moments” in time that will tell a story? Are you tired of your pictures coming out blurry? Do want to buy or have a nice camera, but you don’t know what to do with it? Well this is the class you have been waiting for. This class, “Painting with Light” – Basics in Photography is designed for the student to gain a basic and practical understanding of how to capture the moment. This class is great for all skill levels. It will cover the basics of photography – film, optics, and flash – perfect for those who have never studied the art and science of photography before. For some that feel that the basics may seem too basic you MUST have this solid foundation. Not only will you learn in a classroom setting, you will also have the opportunity to go out and practice taking pictures! I can already Picture you there!
On March 23, 2013 class, you will go to City Park in New Orleans to take pictures. You may bring a model!

Have fun learning the basic rules of the game of Texas Hold’em poker. Begin with the history of poker and how Texas Hod’em has become the King of poker games. You will learn the differences between casino and home Texas Hold’em games. Learn the rank of hands and suits. Develop a firm foundation for playing the game. This course provides knowledge of the mechanics of the game of Texas Hold’em poker.
