Bite of the Arts 2010

Viva Espana:  Celebrating the Spanish Influence
14th Annual Bite of the Arts Event

The evening began with a cocktail reception and hors d’oeuvres, followed by a three-course dinner prepared by well-trained student culinarians under the direction of Chef Adolfo Garcia – owner of Rio Mar, La Boca, a Mano and Gusto restaurants in New Orleans.  Approximately $80,000 was generated for institutional advancement and more than 300 attended the event.

Pinchos de acientuna y boqueron/Assortment of stuffed olives
Tostas de cebolla y acelga/Flatbread with onion and greens

Reception Station III
Salpicon de mariscos/Chilled seafood salad
Ostras riomar/Baked oysters with spinach and chorizo
Gambas en gabardina/Bechemel dipped shrimp breaded and fried

Flambe’ Station
Assorted John Folse cheeses
Setas al jerez/Mushrooms with sherry flambe’
Caldo Iseno style/Pork, beans,, greens and potato soup

Sit-Down Dinner
Pimientos rellenos de raabo de toro/Oxtail stuffed peppers
Grouper a la Vasca/Grouper braised with shrimp and mussels

Trio of Desserts
Flan/Egg custard
Arroz con leche/Rice pudding
Chocolate con churros/Chocolate with fritters
