Director and Assistant Professor of Cytotechnology
Celdrick Course is not afraid to admit that she’s a northern Mississippi woman who fears spiders. So, during her second interview for the director of cytotechnology position, she was quite shocked to see the waitress at Dave’s Cajun Kitchen pass her a massive plate of food that contained a “giant fried tarantula,” otherwise known as a softshell crab.
“I wanted to scream, protest and throw the plate,” Course says. “I ate the fries and other items that came with the dish. I cut up the crab (spider) in small pieces and smiled and laughed with my colleagues but could not eat the crab.”
Since then, Course has adjusted well to south Louisiana life and brought prestige to the cytotechnology program, the only one of its kind in the state.
In 2005, all four of her cytotechnology students successfully completed their national registry on the first try and scored above average. It’s an accomplishment Course is deeply proud of.
“What I like about my job is the uniqueness,” she says. “There are only about 48 cytotechnology programs in the country. Charity in New Orleans had the first one in Louisiana 30 years ago, and LSU bid for money to restart the program 10 years ago; however, Nicholls won that bid.”
In her spare time, Course enjoys shopping for antiques and attending festivals with her husband.
