Simone Camel won’t hide that she has high expectations for her students. It’s only because she knows they can rise to the challenge.

“The greatest strength of the Nicholls dietetic program is the dedicated faculty members who believe in the students’ ability to improve their lives and the lives of others by becoming professionals who will address the nutrition-related health care needs of our state,” Camel says.

During her 20 years of clinical practice, Camel participated in several research projects related to nutrition for renal and liver disease and organ transplantation patients. She has served as an instructor and coordinator of dietetics at Nicholls since 2005.
