Culinary arts students have a wonderful opportunity for camaraderie, shared interests and education when they join Junior ACF. The American Culinary Federation is the national certifying association for professional chefs. An ACF certification means that you are serious about your career and work toward achieving high quality standards.

Junior ACF was organized so that senior members (industry chefs) could mentor young culinary students. The Chef John Folse Culinary Institute Junior ACF chapter is sponsored by ACF New Orleans. Dues are $65 per year, and meetings are bi-monthly. Junior ACF is committed to community service, competitions, social activities and education.

Junior ACF Student Team

The Chef John Folse Culinary Institute Junior ACF Student Team consists of five culinary students in good standing with Junior ACF. Team members devote more than 200 man hours each in preparation for state and regional cooking competitions. Teams must cook a four-course signature menu for four guests in 75 minutes from scratch. They must show advanced knife skills, butchery, cooking methods, pastry skills and sanitation. The institute has never lost a state competition it entered. Regional medals won include five bronze and one silver. The team competes whenever conditions permit.

The Chef John Folse Culinary Institute five-member Junior ACF Knowledge Bowl Team competes each year at the Central Region ACF Conference. The competition is in a Prep Quiz Bowl format. Student team members study sanitation, nutrition, cooking methods, meat fabrication, soups, stocks, sauces, bakeshop and classical cuisine in preparation for this exciting competition. The 2007 team earned a gold medal at the regional conference in Milwaukee and placed second overall. In 2006, the team earned a bronze medal.
