THIBODAUX - Chef Donald Kasten, lecturer at The John Folse Culinary Institute, was recognized for March by the Nicholls State University Academic Council for his outstanding service and significant contributions to the teaching of culinary arts.
A faculty member since August 2005, Kasten’s teaching methods emphasize professional dining room service as vital to the success of any restaurant. In his classes, students learn to deliver first rate front-of-the-house service, exceeding the expectations of guests. From ambiance, sanitation and table-setting, to menu presentation, order-taking and wine service, students gain practical, hands-on experience.
Originally from Michigan, Kasten earned an associate degree in culinary arts as well as an associate degree in culinary management from Grand Rapids Community College. He then received a bachelor’s degree in culinary arts from Nicholls.
Kasten teaches several courses, including Principles of Food and Beverage Service; Foodservice Inventory Selection, Procurement and Control; and Beverage Operations. He has also served as Student Knowledge Bowl Team coach; Jubilee dinner coordinator; academic advisor; and United Way campaign representative.
