The 14th annual Bite of the Arts, Nicholls State University’s premier fundraising event for the John Folse Culinary Institute, generated approximately $80,000 for institutional advancement.
Themed “Viva España: Celebrating the Spanish Influence in Cajun and Creole Cuisine,” the Nov. 11 event attracted more than 300 attendees. The festivity in the Bollinger Memorial Student Union included a cocktail reception and hors d’oeuvres, followed by a three-course dinner prepared by well-trained student culinarians under the direction of Chef Adolfo Garcia – owner of Rio Mar, La Boca, a Mano and Gusto restaurants in New Orleans.
