Nicholls culinary student heads to Napa for national contest

THIBODAUX – Having won first place for the fourth consecutive year at the South Central Regional San Pellegrino Almost Famous Chef Competition, the John Folse Culinary Institute at Nicholls State University is once again setting its sights on national acclaim.

Nicholas Hymel, culinary junior from Raceland, won top honors against seven other students at the regional competition in Austin, Texas, earlier this year. His menu included quail fricassee with creole cream cheese grits and smothered collard greens.

Hymel will take the winning recipes to California this week – joined by his faculty advisor, Chef John Kozar, coordinator of curriculum and instruction at the John Folse Culinary Institute – to compete for the national title.
