Rondeno says that he always knew that culinary was a passion that he wanted to pursue. Rondeno actually changed his major from engineering to culinary but he says that this was one of the best decisions that he has made in his life.<\/em><\/p>\n<p><em>Over the years Rondeno has learned from culinary legends such as Gerard Maras, Anne Kearney, Sue Zemanick and Emeril Lagasse and has held leadership positions in many of their kitchens. Now Rondeno is the owner of Rondeno Culinary Designs in Los Angeles where he caters to many celebrities\u00a0and has his own spice collection. We recently launched the Rondeno Spice Collection and a line of chef and motivational t-shirts.<\/p>\n<p><strong>Q: How important do you think that culinary school was to your success?<br \/>\n<\/strong>A: Culinary has been great for my success. It showed me many different avenues in the culinary world and prepared me for a career that requires discipline and consistency.<\/p>\n<p><strong>Q: What did you learn at CJFCI that still impacts you today?<br \/>\n<\/strong>A: I would have to say learning about regional Louisiana cuisine. I&#8217;ve been able to mesh it with other cuisines from around the world to create something special for my guests but I always fall back on my foundations of Cajun and Creole cuisine.<\/p>\n<p><strong>Q: What advice would you like to share with young culinarians?<br \/>\n<\/strong>A: Learn from your peers and constantly gain knowledge from your chef.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ryan Rondeno&#8217;s<br \/>\n<\/strong><strong>ROASTED FINGERLING POTATO, CHERRY TOMATO, AND PARMESAN CHEESE<\/strong><\/p>\n<p><strong>Serves 4-6<\/strong><\/p>\n<p>Ingredients<a href=\"https:\/\/www.nicholls.edu\/culinary\/files\/2017\/10\/fingerlingpotatoesryan.png\"><img decoding=\"async\" class=\"size-medium wp-image-1873 alignright lazyload\" data-src=\"https:\/\/www.nicholls.edu\/culinary\/files\/2017\/10\/fingerlingpotatoesryan-300x300.png\" alt=\"\" width=\"300\" height=\"300\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 300px; --smush-placeholder-aspect-ratio: 300\/300;\" \/><\/a><br \/>\n1 lb. Fingerling potatoes<br \/>\n5 tbs. olive oil<br \/>\n2 tbs. butter<br \/>\n6 cloves garlic, chopped<br \/>\n1 1\/2 tsp thyme, fresh<br \/>\n1 tbs Rosemary, fresh<br \/>\n2 tbs. of Nola Creole Rub<br \/>\nJuice of 1 lemon<br \/>\n2 Cups cherry tomatoes<br \/>\n1\/4-1\/2 cup parmesan cheese<br \/>\nPreparation<br \/>\nPreheat the oven to 350 degrees.<br \/>\nIn a 12 inch saute pan, saute potatoes with 2 tablespoons of olive oil for five minutes on medium heat. Season with Nola Creole<br \/>\nRub. Once golden brown, roast in the oven for 25-30 minutes.<br \/>\nBlistered Tomatoes:<br \/>\nOn medium-high heat, add 2 tablespoons of olive oil in a 10 inch<br \/>\nsaute pan. Add tomatoes. Saute until the skin starts to break.<br \/>\nSeason with salt and pepper. Set Aside.<br \/>\nOnce potatoes are done. Set aside in a bowl. In the same pan,<br \/>\nadd 2 tablespoons of butter and 1 tablespoon of olive oil. The<br \/>\npan should be at medium heat. Add the garlic, thyme, and rose-<br \/>\nmary. Cook for 30-45 seconds. Add lemon juice. Fold in tomatoes<br \/>\nand potatoes.<br \/>\nTaste and adjust seasoning.
