{"id":3225,"date":"2011-12-01T16:30:15","date_gmt":"2011-12-01T22:30:15","guid":{"rendered":"https:\/\/www.nicholls.edu\/news\/?p=3225"},"modified":"2011-12-01T16:30:15","modified_gmt":"2011-12-01T22:30:15","slug":"john-folse-to-headline-nicholls-commencement","status":"publish","type":"post","link":"https:\/\/www.nicholls.edu\/news\/2011\/12\/01\/john-folse-to-headline-nicholls-commencement\/","title":{"rendered":"John Folse to headline Nicholls commencement"},"content":{"rendered":"<p>THIBODAUX \u2013 Chef John Folse, namesake of Nicholls State University\u2019s culinary institute, will deliver the keynote address and receive an honorary Doctor of Letters on Saturday, Dec. 10, when the university confers approximately 670 degrees during commencement exercises in Stopher Gymnasium.<!--more--><\/p>\n<figure id=\"attachment_3226\" aria-describedby=\"caption-attachment-3226\" style=\"width: 208px\" class=\"wp-caption alignright\"><a href=\"https:\/\/www.nicholls.edu\/news\/wp-content\/uploads\/sites\/66\/2011\/12\/Chef-John-Folse.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"size-large wp-image-3226\" title=\"Bite of the Arts 2005\" src=\"https:\/\/www.nicholls.edu\/news\/wp-content\/uploads\/sites\/66\/2011\/12\/Chef-John-Folse-461x540.jpg\" alt=\"\" width=\"208\" height=\"244\" \/><\/a><figcaption id=\"caption-attachment-3226\" class=\"wp-caption-text\">Chef John Folse<\/figcaption><\/figure>\n<p>Folse will speak at 10 a.m. to graduates of the College of Arts and Sciences and the College of Education. At 2 p.m. he will address graduates of the College of Business Administration, College of Nursing and Allied Health and University College.<\/p>\n<p>Often called \u201cLouisiana\u2019s Culinary Ambassador to the World,\u201d the St. James Parish native founded Lafitte\u2019s Landing Restaurant in Donaldsonville, after which he expanded into catering and manufacturing. Chef John Folse &amp; Company is one of only a few chef-owned, food-manufacturing companies in the United States that produces custom-manufactured foods. Bittersweet Plantation Dairy, also owned by Folse, utilizes milk from local dairy farms to produce cheese gelato, yogurt and butter. His catering and events management division is housed at White Oak Plantation in Baton Rouge.<\/p>\n<p>Folse has also authored seven cookbooks in his Cajun and Creole series, including \u201cAfter the Hunt: Louisiana\u2019s Authoritative Collection of Wild Game &amp; Game Fish Cookery.\u201d<\/p>\n<p>A certified executive chef, member of the American Academy of Chefs and past president of the Research Chefs Association, Folse recently completed the filming of \u201cLouisiana\u2019s Food Heritage: The Encyclopedia Series,\u201d based on his best-selling cookbook, \u201cThe Encyclopedia of Cajun &amp; Creole Cuisine.\u201d He also hosts his own television cooking show, broadcast on public television stations, as well as a syndicated radio show, \u201cStirrin\u2019 It Up!\u201d<\/p>\n<p>The Rev.
