The Chef John Folse Culinary Institute is an academic college of Nicholls State University, 906 E 1st St, Thibodaux, Louisiana. Nestled deep in the heart of Cajun and Creole Country, Nicholls is located in close proximity to many major Gulf Coast cities and is just about an hour southwest of the culinary center of New Orleans. The 210-acre campus fronts scenic Bayou Lafourche and is located on land once part of historic Acadia Plantation.

 

The institute’s location puts it at the center of Louisiana’s rich culture and culinary traditions and deep in a natural environment rich in the crops, seafood and wild game that inspired those dishes, allowing students to immerse themselves not only in cooking, but to learn about the cultural and ecological origins of the foods that they study.
